You argue with Simpson, telling her again that you have found the most economical and sanitary way to stew tomatoes -- and that is to use large covered containers.

You neglect to mention that the taste of the product is the same, and don't offer her a sample of the stewed tomatoes. Becoming upset, you decide to just go ahead and create the open vats.

Soon the plant opens and operates until a few weeks later, when some consumers complain of upset stomachs. Health inspectors threaten to shut down the plant, and you are called back to correct the problem of the open vats.

"Safety decisions are a major part of any design," says Loren Bode. "In developing a new food process, you have to make many decisions on the why, how, when and where of components of the entire process."
