You call it a day.

You're certain that your eyes got the better of you today. Mrs. McPhee is a top-notch businesswoman. You trust that she knows her suppliers and is aware of the conditions in which the products are prepared. If she noted a problem at Bruno's Packing Plant, she would have mentioned it ages ago.

A few months later, the inspection agency receives over 15 complaints of food poisoning in the area. Upon further investigation, you learn that every victim had eaten steak the night that he or she had fallen ill. The agency initiates a thorough inspection of local packing plants and discovers highly unhygienic work habits at Bruno's Packing Plant.

The agency advises all local supermarkets to dispose of any meat packed at Bruno's until further notice. You realize now that you should have erred on the side of caution that day at Mrs. McPhee's. Poor processing conditions can lead to serious illness for consumers as well as financial loss.

According to Ivor Wright, a regional coordinator with a food inspection agency, the consequences of a food inspector's decision are often economic. "You reject something that might have been all right, or you might miss something that should have been stopped. So, there's quite a responsibility."
