When your mom or dad uses a recipe, they want the ingredients that produce the best taste and texture for that dish. Different types of flour help us achieve the results we need in a variety of products. All-purpose flour is fine for most home cooking needs, but you must consider all the other foods we eat.

For example, read the ingredients on a package of spaghetti. You'll find semolina flour listed. This flour, with its particular combination of protein and gluten content, makes the best spaghetti product.

Cake flour is milled to be light and silky, and as a result, produces the best cakes. You wouldn't want to use semolina to bake a cake or cake flour to make spaghetti noodles.

Grains are an important part of our diets and we need variety -- biscuits, bagels, rolls and breads. That variety comes from the many different products that can be made from the various types of flour.
