The Institute for Food Technologists (IFT) has just announced a plan to offer continuing education classes in the field of sensory evaluation to established food science professionals who would be interested in furthering their careers through education.

The program is being offered to all food scientists, whether they are in the sensory field or not. That means the program will be available to more than 70,000 food scientists. The courses the IFT is offering will only be available to a limited number of participants at a time.

You have decided to apply to teach a course on the nuances of chocolate, on a rotating basis. Write a letter of interest to the education board of the IFT.

Be sure to use good communication skills in preparing your letter. "It is important to think through what needs to be conveyed and make sure spelling and grammar are correct," says sensory analyst Lee Ann Carlson.

These are the facts that must be included in your letter:

  • You would like to teach the course on a rotating basis.
  • The course you are proposing would teach food scientists about the types of chocolate, how and why chocolates differ and the difference between carob and chocolate.
  • You will provide examples of the types of exercises and laboratory work you want to do for each section of the course.
  • The course has educational value, but it's also fun.

Remember to thank the board for its time and let them know you are available to answer any of their questions.
